Jumbo shell pasta are stuffed with a tempting blend of pesto, spinach, and tofu. It's all baked together in an easy tomato sauce for this sneaky vegan meal.
Used the idea of using tofu instead of ricotta and not cooking the shells ahead of time. Used homemade sauce, used mozzarella on top, used kale instead of spinach. Rating (I think my sauce could have been better. The tofu & kale were not the problem.
