Mediterranean Spinach Salad 3/4 cup sweet onion, chopped 1 teaspoon garlic, minced 18 oz. spinach, well cleaned 1 tablespoon pine nuts, toasted 2 tablespoons sundried tomatoes in oil 2 tablespoons kalamata olives, pitted and chopped ½ teaspoon granulated onion ¼ teaspoon sea salt 1 tablespoon olive oil Sauté onion and garlic in a large frying pan with olive oil until caramelized. Add spinach and stir to wilt. Remove from heat and add remaining ingredients. Serve immediately.
