Quinoa and Tofu Burgers (Makes 8 patties: 1 C water, 1/2 cup quinoa, 1/3 cup walnuts, 1 pckg extra firm tofu, 1/4 C parsley chopped, 2 cloves garlic minced, 1/2 purple onion diced fine, 1/2 C grated carrot, 3/4 C raw grated beets, 2 eggs, 1 tsp curry powder, 1 tsp chilli powder, 1 t smoked paprika, 1/2 t cayanne, 1 T dried oregano, 2 T dried basil, 1 t salt, 3 T rolled oats, and 2 T tamari - serving suggestions: guacamole, goat cheese, salsa, taboulii, and pretzel buns!)
