1 sweet potato ¾ cup green lentils 1 tsp chopped fresh ginger 1 clove of garlic, chopped 1/4 cup chopped leak 1 carrot, chopped 1 box of low sodium chick stock 2 tbls olive oil ½ tsp cumin ½ tsp yellow curry powder S Saute garlic, ginger, leak, carrot & potato in olive oil about 5-7 min. Add chicken stock, cumin, curry powder and lentils. Cook about 45 min, until lentils are soft. Cool 20 min then blend soup in blender in batches. Put back into pot and heat up on med heat.
