Pan-Fried, Shishito-Style : Heat olive or coconut oil over high heat in a cast-iron skillet, Sprinkle peppers with enough oil for a thin coating, the toss them in the pan with a pinch of salt. Stir-fry until blistered and warmed. Warning: Open a window first, because the room will get smoky as the peppers cook. Serve with your favorite creamy dipping sauce.
