ONE BOWL Lowfat Coconut Pecan Pear Muffins bursting with toasted coconut and pecans and super moist from pear puree - you won't believe they are guilt free!!!

Quick Ginger Bran Muffins - I followed batter recipe & cooked in oven - 350, 15+ min. w/ tins 1/2 full.  Will up ginger and cinnamon.  May add orange or lemon zest.  Moist and delicious!!  3/4c bran cereal (crushed); 3/4c wheat bran; 1T each: veg oil, honey, molasses; 1/2c milk; 1 egg; 1/2c w/w flour; 1/2tsp baking soda; pinch salt; 1/2tsp cinnamon; 3/4tsp ground ginger; 1/2c dried fruit.  Mix brans w/ 1/4c boiling water; set aside. Mix liquides; stir into brans. Add drys; stir til combined.

Pumpkin Oat Greek Yogurt Muffins -- except: for sugar sub 1/4 cup brown sugar and 1/4 cup blue agave, for pumpkin seeds used walnuts. Replaced 3/4 cup of oats with toasted ground tri-color quinoa. Added a bit more pumpkin, and stirred in yogurt rather than blending. Doing the happy dance these are so delicious!
