Roasted zucchini, summer squash, & red onions. Toss diced veggies in a bag with mix of Parmesan cheese, garlic powder, oregano, salt, pepper, & olive oil. Spread on greased, foiled baking sheet, & broil on high for a few minutes. Flip veggies, and broil a few minutes more, watching to prevent burning. Yumm!
