Crudite Roll-Up - Fresh veggies and ranchy cream cheese make a healthy, light snack or appetizer!

Roasted zucchini, summer squash, & red onions. Toss diced veggies in a bag with mix of Parmesan cheese, garlic powder, oregano, salt, pepper, & olive oil. Spread on greased, foiled baking sheet, & broil on high for a few minutes. Flip veggies, and broil a few minutes more, watching to prevent burning. Yumm!

Chili Tuna Roll-Ups *** Make this for lunch a lot. Changes: I don't cut the rolls up, leave them as a wrap! Use 3T of sweet chili sauce, only 3 green onions, 1/3 less fat cream cheese and only half a package - it's plenty. Needs more than 1T water. Careful which chili sauce you use - some have lots of sugar.
