You CAN eat thistles! Though a symbol of Scotland, I always approached the thistle as "that nasty dragon-weed I don't want to deal with." But NOW, with my new-found knowledge of unwanted edibles in the backyard, I will (hopefully) be more able to cope with weeding this year.
