Mushroom & wilted greens toast with poached egg. Made it! This pin doesn't have a recipe, but what I did was saute the mushrooms, then add some lettuce or spinach (whichever I had on hand, any greens would be good though). Poached an egg while that was going and pan-fried the toast. It was glorious. I ate it 4 days in a row.
