Cauliflower 'Mac-n-Cheese'. First off, this was fantastic and a low carb substitute for pasta. 8oz velvetta & 1tbs butter melted. 1 head of cauliflower chopped. 2 slices of onion diced. A dash of pepper & garlic powder. Don't add extra salt, velvetta is already salty. Mix the cheese and veggies. Fold in 2 beaten eggs. Bake at 325* covered for 1 1/2hrs. This works with a variety of veggies, especially broccoli. ~JM
