Cut-Out Butter Cookies - Anjea's note: Perfect. The dough is SO easy to roll and they keep their shape almost exactly. I rolled between parchment, cut cookies 3/8", and chilled 10 minutes before baking. Texture is sturdy, not crumbly, and not crispy - a perfect in-between of sugar cookies and shortbread.
