No-Oil Carrot Ginger Dressing

Eat to Live Program, nutritarian oil-free salad dressing recipe! Vegan and Eat to Live program approved! It tastes like the creamy ginger dressing you get at the Japanese restaurants!

High protein, no oil #pesto.  Not traditional but yummy and more healthy.  Blend in Vitamix or food processor:  1 c tightly packed fresh basil leaves, 1 garlic clove, 15-oz  navy/cannellini beans (1.5 c), 1 T water, 2 T nutritional yeast, 2-3 T fresh lemon juice (1/2 lemon), 1/2-3/4 t kosher salt.  You can add olive oil to taste if you prefer!  Yield: 1.5 c
