Omni P2 Mediterranean Meatballs: 8 oz chop meat, 4 cloves garlic chopped, 1/2 onion chopped fine, 2 Melba toasts crushed into breadcrumbs, 1 t nutmeg, 1 t sage, 8 oz of spinach wilted, 1 14 oz. tomato sauce or purée. Mix together everything but tomato sauce. Roll into small meatballs & pack tightly in pan. Pour sauce over top. Bake @ 400° for 25-30 min. Serves 2.
