Basic Miso Soup - Miso soup is the comfort food of Japan.  It’s made by first making a stock called dashi, with kombu (dried kelp) and then stirring in the miso paste at the very end.  The soup is simple, pleasantly salty, and easy to digest.  Many health food stores will carry kombu in their macrobiotic sections, and it can also be found in Asian markets. If you cannot find any kombu, use a light vegetable or chicken stock instead.
