White Bean Fennel Soup. I got a bunch of fennel with my CSA and decided to give this recipe a try. It was excellent, robust, Italian flavors. I used fire roasted diced tomatoes, fresh thyme, and instead of just spinach I used a baby blend of spinach, kale & beet greens (did NOT cook after adding the greens, they wilt enough just adding to hot soup). I served with shaved Parmesan cheese and garlic bread.
These sound so good. Had Tacos al pastor in a mexican restaurant today. The meat was diced into tiny cubes and pan fried until it was crispy. They served it with sliced avocados and a big wedge of lime. Wow it was good! I'll have to try this and see if it is as good!
Easy Mini Chicken Pot Pies. These are actually more like chicken pot biscuits, and they were great. I used fresh veggies instead of frozen and added corn and yellow squash. I also only used half the cheese. They were a hit, good for kids and adults.
