Full Spectrum Veggie Salad -- you could use this half-and-half with a grain (hulled barley, quinoa, wheat berries, brown rice...) and/or add beans (black, garbanzo) or of course just eat your yummy veggies!
Tex-Mex Enchilada Casserole. Tried 1.3.14. Yummy but I would've liked a bit more sauce. Left out the corn (personal preference). Used corn starch instead of flour to thicken the sauce (as I was serving to a gluten-intolerant missionary). Simple and yummy flavors. I cut downy he chili powder from 2 Tb to 1 t as my chili powder is spicy! I also used a jalapeño instead of poblano due to what I could find easily.
