Spinach and Caramelised Onion Pasta (Vegan + GF) *I found this by searching "fancy vegan dinner" and it did NOT disappoint! Amazing with shiitake bacon mixed in. I would even make just the sauce as a sandwich spread - so delicious!
Scandinavian food uses lots of foraged ingredients. For the filling try chanterelles or other wild or cultivated mushrooms. If using chanterelles or shiitake mushrooms, take off their woody stems and just use the caps.
