Meat
  • 2 1/2 lb Top round roast or rump roast or bottom round, roast
Produce
  • 2 Bay leafs, large
  • 4 Celery stalks, large fresh
  • 1/2 cup Cilantro
  • 3 clove Garlic mashed or put through a garlic press, fresh
  • 2 tsp Garlic powder
  • 1 Jalapeno pepper cut in half do not remove, medium seeds
  • 1/2 tsp Oregano, dried
  • 1/2 cup Parsley
  • 5 Red potatoes or yukon gold potatoes, large
  • 1 Vidalia onion or sweet onion, large sweet
Canned Goods
  • 15 oz 1 can(s) beef broth
Baking & Spices
  • 1/2 tsp Black pepper, ground
  • 3 tbsp Corn starch
  • 1 cup Flour
  • 1 tsp Sea salt
Oils & Vinegars
  • 3/4 cup Canola oil
Nuts & Seeds
  • 1/2 tsp Cumin, powder
Dairy
  • 2 cup Crema mexicana or sour cream
  • 1/4 cup Milk
Beer, Wine & Liquor
  • 1/2 cup Table wine burgandy or merlot
Liquids
  • 2 can(s) Water

  • 5 Or 6 large crrots peeled and cut into three pieces each
  • 1 Large sweet red pinento pepper cut in half seeds & core removed, cut in half

I start almost the same as you would with your pot roast browning and searing the meat but thats where it all ends. I created this recipe many years ago because I wanted to give my pot roast a delicious spicy flavor and keep the rich gravy, potatoe and carrots, and a few other things.
