Asian Inspired Carrot Kohlrabi Salad  1 c shredded kohlrabi & 1 c shredded carrots. Mix kohlrabi & carrots w/ 1/2 c of bean sprouts.  Dressing: 1/4 c extra virgin olive oil,   1/2 - 1 tbsp soy sauce (gluten-free use tamari or coconut aminos)  1 tbsp sesame oil  1/2 - 1 tbsp rice wine vinegar  fresh minced ginger, or ground ginger to taste  juice of half a lime  Pour dressing over the salad, sprinkle with sesame seeds, and enjoy!
