Oven Baked Veggie Chips - a delicious alternative to high-fat potato chips. 1 large potato, peeled; 1 medium sweet potato peeled; 1 medium beet peeled. Cut all veggies in 1/16" thick. put in bowl with 3 T olive oil. Lay on baking sheet (single layer) and sprinkle with salt. Bake at 400F for 10 - 12 min until golden and start to crisp. Serve hot.
