Stuffed Zucchini.  Ingredients: • 2 medium zucchini (or 1 large) • pasta or rice • 2 tomatoes • 2 cloves garlic • 1 green peppers • 1 medium onion • chopped parsley • 50 gr grated Parmesan • salt and pepper • 200 ml chicken stock

Method: Cut zucchini clean inside with a spoon and put salt in small amount. Boil pasta / rice and place a layer in zucchini. Chopped onion, peppers and tomatoes, then place them over pasta / rice. Sprinkle parmesan and chopped parsley.
