Rice Crackers With Pork-Shrimp-Coconut Dip | Rice crackers, khao tang, are the traditional (and the best-tasting) vehicle for this creamy, flavorful dip. Together, they form this old-school dish that is still very much in demand, even though the city is flooded with all kinds of modern appetizers these days. The dip looks reddish but is not—should not be—hot. The color comes from river prawn tomalley, which also contributes extra creaminess and flavor. | TASTE

NYT Cooking: Making a compound of unsalted butter and the salty, fungal deliciousness of Japanese miso paste is a surefire way of adding immense flavor to a simple weeknight meal. Here the mixture is spread over chicken thighs, which are then roasted to golden perfection. But you could easily use it on salmon or flounder, on corn or potatoes. The recipe calls for white miso, which is more mild than the aged version known as red miso. But you could certainly use red for a more intense result.

Hazelnut and Wild Mushroom Pâté | I usually serve this rich dish as an appetizer, but because it has a meaty flavor from the nuts and mushrooms, it works nicely as part of a vegetarian main dish, as well. You can also serve this versatile pâté with my buttery Homemade Ritz Crackers, spread it on a crusty baguette, use it as a topping for a savory dough, or serve it with a cheese plate. | From Naomi Pomeroy's TASTE & TECHNIQUE | TASTE

NYT Cooking: This fairly traditional hot crab dip, rich with mayonnaise, Monterey Jack and plenty of hot sauce, has one major difference: the addition of chopped oysters, which add a saline note to all the creaminess. You can mix the ingredients together a day ahead and store it in the refrigerator. But be sure to bake it just before serving. You want the cheese hot, melted and very gooey.
