Homemade Turkey Sausage- this is soooo much better than store bought breakfast sausage! I only had one pound of turkey meat so I adjusted the measurements as follows: 1/2 tsp. Ginger, 1 & 1/4 tsp. salt, 1 tsp. sage, 1 & 1/4 tsp. black pepper, 1/4 tsp. cayenne pepper. We like hot breakfast sausage and this was perfect! I didn't form it into patties this time; just crumbled it to put in quiche, but I plan on making patties and freezing them soon.
