Beet Salad (I added cardamom to the vinaigrette mixture and doubled the vinaigrette ingredients. Single amounts weren't quite enough, double a little too much. At least I had control on how much I wanted to cover the beet mix) Great recipe and so easy!
It's time we rescued beets from our childhood nightmares — when they were little better than bland wedges scooped out of a can. Roasted beets are delightful, sweet but very earthy and aromatic — great for a side salad.
