Mary's original Humboldt Fog-making technique created out of necessity. Each wheel is formed using a cheese mold lined with cheese cloth. Our cheesemakers add half of the curd to the mold, a bit of edible ash, and then more curd before turning out the wheel and re-using the mold. Tricky Mary only had a few molds and couldn't wait for gravity to do the work of pressing the curds!
