Protein snickerdoodles: 3c of oatflour, 1t baking powder, 2 scoops birthday cake whey protein powder (About Time brand). In separate bowl, combine 1c almost melted coconut oil w/1/2c coconut sugar, 2T honey, 2 whole eggs, 1t vanilla extract. Add flour mixture to egg mixture until the batter is thick enough/not sticky so you can roll it into balls. Roll the dough into balls & roll in a mixture of coconut sugar and cinnamon. Place onto a sprayed cookie sheet. Bake @ 350F for 7 minutes.
