Sugar Free Mint Chip Milkshake ½ c. cottage cheese 1½- 2 c. ice 1 c. unsweetened almond milk 2 T or ¼ c. cream 1½ tsp vanilla ¼ tsp peppermint extract or 1-2 drops food grade essential oil 1-2 T Erythritol+ stevia to taste ⅛ t. gluccomannan or xanthan gum, opt ½ oz. 90% dark chocolate  Chop chocolate into smallish chunks. Add rest of ingredients to blender, and blend smooth. Add chocolate and pulse to chop them up to straw-sized chunks.
