Chicken and Cashew Stir Fry - Symply Too Good to be True. An oldie but a goodie. The whole family loved it. We add more veggies (extra snow peas, steamed/microwaved broccoli at the end) as there is ample sauce and it stretches the meal a bit further (for leftovers for work the next day!).  Could use store bought roasted (unsalted) cashews and/or sliced or diced chicken breast to reduce prep time in this recipe. Highly recommend for a delicious, healthy meal.

Vegan Curry Rice - I don't have a rice cooker, so I cooked brown rice with half almond milk, half water. I boiled the carrots in a pan until soft-ish, added the broccoli and a chopped up onions, boiled them until the water was almost gone, then added grapeseed oil and curry and sauted them. I heated chicken and chickpeas, and mixed everything together and added more curry and spices
