Garlicky-thyme Roasted Beets with Cauliflower - Toss together beets, garlic, oil and thyme. Spread on a foil-lined pan and roast in 400 degree oven for 45-60 minutes. In the meantime, wash and slice cauliflower. The cauliflower will need 15-20 minutes to roast (done when it starts to brown!) so add it to the beets around the 35-minute mark. If you don’t want pink cauliflower, you can always keep it in a separate pan! Makes about 2.5 cups.
