This is what has been in the slow cooker for the last 8 hours, ready for a pulled pork party later tonight! I'm using a secret ingredient for the liquid in the pot which will probably freak some people out - but it's all about experimentation, right?

The finished dish - PB pork with crunchy roast potatoes, cheese and herb kale and my new obsession, balsamic mushrooms (with a bit of fresh ginger). The peanut and pork combo works really nicely, and the sweet tang of cherry jam is really interesting - next time I may consider adding even more cherry (maybe through a sauce). All in all, I'm full!
