This is a light pasta dish with plenty of shrimp, garlic, and lemon. I have reduced the amount of lemon and salt from the original recipe to suit my DBFs tastes. The leftovers are just as good heated up in the microwave the next day.
Pesto Shrimp--There are endless ways to use pesto — the Italian sauce made from olive oil, basil, garlic, nuts and Parmesan cheese — but this has to be one of my favorites. The pesto is used as a marinade and sauce for grilled shrimp, which turn out slightly charred and loaded with flavor. Whether you serve the dish for dinner with pasta and a vegetable or as an appetizer. MMM
