Brown Sugar Roasted Pineapple is a easy side dish with hints of butter and cinnamon.  I serve it all the time with ham but it is also great with BBQ pork, breakfast sausage or even over ice cream.  For all it's versatility it is crazy easy to make - you can have it in the oven in five minutes!  Easter Dinner anybody?

Vanilla Plum Crumble Pie.  This is a keeper!   Smells incredible.   We baked this one in a metal pan and after a night of cooling,  it will go into the freezer to pull out at Thanksgiving.   On a side note,  the mister is prepping more plums and we'll be freezing the filling to use later this year.

Christmas Shortbread Bites  - these are the most pop-able fun to eat cookies out there! They were actually really easy to make and they taste AMAZING! A perfect Christmas treat, but you could also use a rainbow sprinkle blend for birthdays.
