Skinny Mozzarella Bites for 91 calories per serving, instead of traditional mozzarella sticks at 130 calories per serving. I would probably substitute some homemade Jack Spratts bread crumbs just to make it a little bit healthier. But still, a great idea.
Smoky Corn Chowder with Shrimp. 2 slices bacon, 1/2 lb shrimp, 1/2 onion, 2 clove garlic, 1 T paprika,1 pinch crushed red pepper, 3 ears fresh corn, 2 c chicken stock, 1/2 c cream. Heat pot. Cook bacon and sear shrimp separately. Heat a pot, add onions and sauté. Add garlic, paprika, red pepper, salt and pepper. Sauté. Add corn and toss. Add stock and cream. Ladle soup into a blender and pulse until creamy. Pour back into the pot and stir to combine.Serve chowder with shrimp and bacon.
