This fresh and healthy quinoa-lentil salad has everything you need from a meal in one bowl.

Italian Grilled Vegetables  8 oz. fresh whole mushrooms  2 medium zucchini, cut into 1-inch slices  1 red bell pepper, cut into 1" squares  8-10 cherry tomatoes  1 small onion, cut into 1" pieces  1 - 2 Tbsp. Roasted Infused Garlic Oil  1 Tbsp Italian Garlic Bread Seasoning  Pepper to taste  Grated Parmesan cheese    Toss first 8 ingredients together in a large bowl. Thread vegetables on metal skewers; grill until crisp-tender. Sprinkle with Parmesan cheese. Makes 4-5 side dish servings.
