Raspberry & Pistachio cake with mascarpone icing - I made this and it is really yummy! Instead of mixing the pistachios through the icing, I layered fresh raspberries and pistachios in between each layer.

I think this is a good idea to make mini carrot cakes. Make carrot sheet cake and then cut it with 1 inch round cookie cutter or larger.Stack them, put cream cheese frosting in between the cakes and on top, voila.you get mini carrot cakes!
