How to make Spaghetti Cacio e Pepe like a Roman | Tales of Ambrosia: Tested. Somewhat of a fail (to be honest)… I used parmesan and the heat of the hot water made the parmesan turn into what looked like big balls of mozzarella (not so good). Just ended up adding butter, seasoning it with salt & pepper and sprinkling parmesan on afterward.  Not Cacio de Pepe.. but, at least, yummy.
