Sweet cornbread molded into English muffin rings, perfect with butter and jam.

Pinner said: Best cornbread ever! Uses one small box of Jiffy Yellow Cake Mix "AND" one small box Jiffy Corn Muffin Mix. That's one cake and one corn.    Mix both boxes together and all the ingredients that are called for on both boxes. Mix and pour into 8"x8" or 9"x9" greased pan. Baked at the time and temp called for on the box. May take a little longer because there is extra batter. Just bake until golden brown and toothpick comes out clean.

Here's a recipe for which we've had quite a few requests: toaster corncakes, English muffin-sized, sort-of-sweet cornbread rounds that can be split, toasted, and slathered with butter and jam. We've seen these in blueberry and cranberry versions, as well as the plain corn formula we offer here; feel free to make your own additions of frozen or dried fruit (though there's something about the basic corn recipe that is very satisfying; the corn flavor really shines through).
