I used this recipe to make a meat spread from some venison backstraps that had been in the freezer for 3 years and an old package of beef liver, haha.  It was delicious! I skipped the juniper, cure, and marjoram and used the vitamix.  (And added garlic cloves, then blended it all with mayo and jarred it in the fridge as a spread)

Crock-Pot Vegetable Chili – This thick and naturally sweet and savory chili makes for some easy, healthy weeknight comfort food!

Homemade pepperoni (recipe from cooks.com): 1 1/2 lb hamburger 1 1/2 tbsp Morton's tenderquick salt 1/8 tsp garlic powder 1 tbsp (or less) CRUSHED fennel seed 1 tbsp crushed red pepper flakes 1 tsp paprika Mix ingredients, form into 4 logs and chill in refrigerator uncovered for 24 hours. Bake for 60 min at 300 degrees on broiler pan (so grease can drip down). Use a meat slicer for extra-thin pepperoni slices. Yum!
