These homemade pecan sandie cookies are unbelievably light, delicate and crisp. Although these are delicious any time of year, they are particularly perfect for wedding showers, baby showers and tea parties.
Pecan Sandies|need 2 c plain flour, 1/4 t salt, 2 sticks butter, 1/2 c powdered sugar, 1/2 c gran. sugar, 1 t. vanilla extract, 1 c chopped pecans. Do heat oven at 350, whisk flour& salt in a bowl. Another bowl add butter,& sugars & beat. Mix in extract, slowly add flour mix & mix all together. Will be crumbly. Add nuts & roll dough in balls place on parchment lined baking sheets, about 1 inch apart. Bake until golden 12 min to 16 min. Cool and enjoy.
Soft and Thick Snickerdoodles via Sally's Baking Addiction | My cookies were not quite so thick and puffy (even after I baked some dough straight from the freezer), but still quite delicious despite the slight spread! (And it's possible that I just need to renew my baking soda for extra puff....)
