A really easy recipe is from the Edmonds cookbook for short pastry.   125g butter,  2 cups flour,  1/4 teaspoon salt and  cold water to bind.   Substitute the flour for GF Now for the secret, leave it in the fridge overnight and it becomes more ‘elastic’ like normal pastry.
