1 bag Trader Joe's frozen kale, 2 cans black-eyed peas, 1/2 pkg of maple bacon chopped in to bite size pieces. Throw it in a crockpot on high for 5 hours or low for 8. It is ugly...but SO delicious. I invented this recipe for New Year's as Black-eyed peas and kale are eaten for prosperity in the coming year. I hope you like it. -Julia Nanigian
Made this for Mike during his first visit in Charlottesville and it was a surprising big hit! Added to regular recipe rotation. The crunch of the cashews is a great texture against the lentils, and the kale makes it a superfood dinner. Serve over millet.
