Vegetable Lasagna This recipe could use some adjustments. Perhaps subbing the lasagna for chicken and make a casserole? Or cutting down on the cheese and milk perhaps subbing pureed cauliflower. Seems high calorie for as healthy as it has potential to be.
Roasted Veggie Pitas with Avocado Dip--delicious! I love the combo of flavors between the tart, spicy, creamy avocado sauce and the savory, warm flavors of the roasted cauliflower and chick peas. This makes a lot of food--if you're cooking for three or fewer, I recommend cutting it in half. The avocado dip is also delicious on its own for tacos, or could be served over meat.
