Quinoa side dish.  I made this earlier in the week and the husband loved it.  Said he could just eat a whole bowl of it.  I didn't have pine nuts on hand and the dish was still yummy in my tummy.

1 May 2012: Made this for my book club dinner. Very tasty and quite easy to make. I used skinless, boneless thighs, but will try skinless chicken on the bone next time. The sauce needs a bit of thickening up.
