Popeyes red beans and rice - Best EVER Fry up a pound of bacon in your biggest pan and break it up into pieces. Keep the fat. Toss a couple of cans of undrained red beans in with it all and mash them up. Add as much jalapeno pepper as you want or as little as you want. Add salt and a bit of onion and/or garlic to taste. Heat through and serve like gravy over rice. My sis-in-law loves this on spaghetti. No - all that fat ISN'T good for you.
