Pumpkin Pasta Surprise - I modified the recipe a little as it called for zero herbs or spices so I found it a little bland but once I spiced it up a bit it was pretty good!! You can't taste the pumpkin at all and it adds a thickness and richness to the sauce plus a whack of health benifits :) Oh and I used green and yellow bell peppers instead of roasted red pepper and probably twice the amount of cream cheese as was called for as I ended up with more sauce than called for.
