This was a big hit tonight. And it was fast and easy. (One recipe change -- I used 2 tbsps sugar instead of just 2 tsps. Also skipped the bok choy and mushrooms since we didn't have any.) I served it with steamed rice and a cucumber/carrot salad. (Used white wine vinegar, salt, a swirl of sesame oil and a tsp sugar as a vinaigrette).

Vegetarian Risotto recipe from Gordon Ramsay. Risotto is one of my favorite foods, so I do want to try this one . although the mushrooms I use probably won't be wild ones, and I prefer to call courgettes "zucchini"!
