This is a very flexible recipe, allowing you to substitute grains for nuts or other grains, as well as your choice of dried and fresh fruits.
Chicken Tostadas and Avocado Dressing. For the mexican rice: Combine 3/4 cup uncooked long grain rice; 1 1/2 cups fat free, lower sodium chicken broth; 1/2 cup minced green bell pepper; 1/2 cup diced tomato; and 1/2 teaspoon ground cumin in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer for 20 minutes.
