Roasted Garlic-Parmesan Squash &Tomatoes ~ Whisk together 3 Tbsp olive oil, 4 cloves minced garlic & 1¼ tsp Italian seasoning. Place ½" slices zucchini (2 small), yellow squash (2 small) & 14 oz halved grape tomatoes in large bowl. Pour oil mixture over & gently toss to evenly coat. Pour onto foiled lined 18"x13" baking pan & spread into even layer. Season with salt & pepper, sprinkle with Parmesan. Roast at 400° ≈25 minutes until tender & Parmesan is golden brown.
