The BEST Amish Cashew Crunch recipe: 1 cup butter or margarine 1 cup sugar 1 tablespoon light corn syrup 2 cups cashews Cook butter, sugar and corn syrup until brown and smelling like brittle (290 F on a candy thermometer) then stir in cashews and quickly dump on a cookie suggest lined with a greased piece if parchment paper. Spread into a thin layer. Let cool and enjoy!
