This is what I made for dinner tonight. I call it Victory Rice, because I was actually successful in getting my toddler to eat fresh veggies! It's sautéed garlic, onion, asparagus, bell pepper, & zucchini. I diced it all very small, flavored it with adobo & basil, & then mixed it with brown rice. It tastes much better than it looks! :)
